Pumpkin soup

Ingredients:
2 tbsp of olive oil
1 onion
500 g of pumpkin
300 ml of vegetable stock
100 ml of cream
1 small piece of ginger
Salt, black pepper

1. Cut the onion into small pieces. Heat the olive oil in a big pan. Cook the onion for about five minutes.

2. Peel the pumpkin and cut it into pieces. Put the pumpkin pieces in the pan with the onion and cook for 10 minutes.

3. Cut the ginger into very small pieces. Put it in the pan with the pumpkin. Add salt, pepper and the vegetable stock. Cook the vegetable mixture for about 15 minutes.

4. Puree the vegetable mixture with a hand blender. Put the cream in the soup and cook for two more minutes.

This soup is very good on a cold, autumn evening with a green salad!

Pumpkin soup

500 g of pumpkin, peeled and cut into pieces
300 ml of vegetable stock
100 ml of cream
1 tsp of grated ginger
Salt, black pepper

For the garnish:

2 slices of bread
Nutmeg, salt and pepper

 

1. Heat the olive oil in a big saucepan. Fry the onion for about five minutes, until it is soft.

2. Add the pumpkin pieces to the pan and keep frying for 10 minutes.

3. Season the vegetable mixture with salt, pepper and the grated ginger. Add the hot vegetable stock. Cook for another 10 to 15 minutes until the pumpkin is very soft.

4. Puree the pumpkin with a hand blender. Stir in the cream and reheat the soup gently.


To make the garnish:

1. Cut the bread into small squares.

2. Fry the bread in olive oil.

3. Put a bit of salt, pepper and grated nutmeg on the fried bread.


Garnish the soup with some squares of fried bread, and serve it with a green salad for a delicious autumn dinner.

Pumpkin soup

1 medium onion, finely chopped
500 g of pumpkin, peeled and cut into chunks
300 ml of vegetable stock
100 ml of cream or soya milk
1 tsp of grated ginger
Salt, freshly ground black pepper

For the garnish:

2 slices of good Italian-style bread
1 tbsp of olive oil
Nutmeg, salt and pepper

 

1. Heat the olive oil in a big saucepan. Cook the onion gently for a few minutes, until it is soft but not brown.

2. Add the pumpkin chunks to the pan and keep cooking for another 10 minutes. Stir the mixture from time to time until the pumpkin softens.

3. Season the pumpkin mixture with salt and pepper and add the grated ginger. Give it a stir, and then add the hot vegetable stock. Lower the heat, and cook gently until the pumpkin is soft. (About 10 to 15 minutes.)

4. Allow the soup to cool for a few minutes and then puree it using a hand blender. Stir in the cream — or soya milk for a vegan version — and reheat the soup gently.


To make the garnish:

1. Cut the bread into squares, about 2 x 2 cm.

2. Heat a tablespoon of olive oil in a frying pan and fry the bread squares until crisp.

3. Sprinkle the fried bread with salt, pepper and a bit of grated nutmeg.


Garnish the soup with the fried bread, and add an extra drizzle of olive oil if you like. Serve it with a green salad for a light, autumn dinner.
